Description
FortiCloud paid account has 1 year hosts log retention, but when log is checked on FortiGate from GUI with FortiCloud as log source, only last 7 days log will be visible.
This is expected behavior. Last 7 days is the default time range if time range filter is not included to prevent query huge numbers of log entries.
Workaround

Filter FortiCloud log with Date or Date/Time for logs on your desired time range as below example.
